You're right. The only way you can possibly avoid 'sad bunny face' is by offering the distraction of a yummy treat as you slowly back away. If you're lucky, they'll be so focused on the goodie that they completely forget what was happening before the deliciousness. :)
The more you pet them the more content they become and the less humane it becomes to stop.
