I'm pretty sure Simon uses his ears for balance at high speeds.

Simon's need for speed almost caused him to wipe-out on this turn.  Gotta love the ears out for balance!

With his ears out for balance, Simon attempts the bunny yoga pose 'downward flopping bun'.  He seems to be regretting this particular life choice because the potential for a roll-over is high.
